How To Make A Chocolate Souffle

 Bonjour everyone!

 Today I will teach you how to make a chocolate souffle.  You can make a successful souffle.  It is really easy.  You must buy an unlined copper bowl, though.  They can cost over a hundred dollars, but you can buy small ones on Ebay for twenty dollars on up. A copper bowl causes a chemical reaction with the egg whites and makes them much stiffer.  You clean the bowl with vinegar and salt.

 You also need white individual souffle cups or one larger one and a whip.

     The ingredients are as follows:

                     2/3 cup of flour

                     2 cups of milk

                     4 tablespoons unsalted butter

                     6 ounces of French semi-sweet chocolate

                     1/2 cup of sugar

                      6 egg yolks

                      8 egg whites

                      3 tablespoons sugar

Serve with chilled : whipped cream with powdered sugar and vanilla.

  Preheat the oven to 180 degrees C. Grease the molds with butter and cover with sugar. Measure out the milk and set aside 6 tablespoons.

Place the sugar, flour, and 6 tablespoons of milk in a bowl and beat with a wire whisk. Bring the rest of the milk to a boil.  Pour a little of the hot milk into the flour mixture and mix well.  Pour the mixture into the rest of the boiling milk and stir over heat for two minutes.  Add the chocolate and remove from heat.

     Add the butter and let it cool for 15 minutes.  Beat the egg whites in a copper bowl until very stiff.  Add a pinch of salt and the 3 tablespoons of sugar at the end.  Add the egg yolks to the butter, flour mixture and stir.

     Fold the egg whites into the mixture.  Pour into the souffle dishes and level the top off with a knife.  Place into the oven and bake about 20 minutes or until done.  Serve immediately with the whipped cream described above.
